you could definitely do a couple. new zealand really isn't that big. you probably want to choose the an Island (North or South) though. and renting a car would be the way to go. from christchurch (major airport), you could make a loop around the South Island (skip the part below Queenstown b/c it's just cold,wet,&windy now.)
i would suggest to make your way down to Queenstown via Lake Tekapo & Mt. Cook, then visit Milford Sound (the road there is awesome), then up the West Coast, around the top (Golden Bay, Marlborough Sounds), and back down to Christchurch.
you'll be amazed at how all these places fit in a tiny island. and most ppl do it in 2 weeks time like you.
